Zucchini Enchilada Roll-Ups โ€“ A Light & Flavorful Dish!

These zucchini roll-ups are a low-carb alternative to classic enchiladas, featuring thinly sliced zucchini filled with seasoned chicken, smothered in enchilada sauce, and baked with gooey melted cheese. A delicious, healthy, and satisfying meal!

  • ๐ŸŒฑ 2 large zucchinis, sliced lengthwise into thin strips
  • ๐Ÿ— 2 cups cooked shredded chicken (rotisserie works great!)
  • ๐ŸŒถ 1 cup enchilada sauce (red or green)
  • ๐Ÿง€ 1 ยฝ cups shredded Mexican cheese blend
  • ๐Ÿง„ 1 tsp garlic powder
  • ๐Ÿฅ„ ยฝ tsp cumin
  • ๐ŸŒถ ยฝ tsp chili powder
  • ๐Ÿง‚ Salt & black pepper, to taste
  • ๐Ÿฅ‘ Optional toppings: chopped cilantro, sour cream, avocado

1๏ธโƒฃ Preheat the Oven:
Set to 375ยฐF (190ยฐC) and lightly grease a 9ร—13-inch baking dish.

2๏ธโƒฃ Prepare the Zucchini Slices:
Using a vegetable peeler or mandoline, slice zucchinis into thin strips. Lightly sprinkle with salt and let sit for 5 minutes to remove excess moisture. Pat dry.

3๏ธโƒฃ Make the Filling:
In a bowl, mix shredded chicken, ยฝ cup enchilada sauce, garlic powder, cumin, chili powder, and ยฝ cup cheese.

4๏ธโƒฃ Roll & Assemble:

  • Place 1 tbsp of filling on each zucchini strip and roll tightly.
  • Arrange the roll-ups seam-side down in the baking dish.

5๏ธโƒฃ Bake Until Bubbly:
Pour remaining enchilada sauce over the rolls and top with remaining cheese. Bake for 20-25 minutes until melted and bubbly.
