Cheesy Beef Enchiladas

These homemade beef enchiladas are stuffed with seasoned ground beef, smothered in a rich enchilada sauce, and baked to perfection with lots of gooey cheese. Perfect for weeknight dinners or family gatherings!

๐Ÿ•’ Prep Time: 15 minutes

โณ Cook Time: 25 minutes

๐Ÿฝ Servings: 6

๐Ÿ”ฅ Calories per Serving: ~450

๐Ÿ›’ Ingredients

  • ๐ŸŒฎ 8 flour tortillas
  • ๐Ÿฅฉ 1 lb ground beef
  • ๐ŸŒฐ ยฝ cup onion (chopped)
  • ๐ŸŒถ 1 tsp chili powder
  • ๐ŸŒฟ ยฝ tsp cumin
  • ๐Ÿง„ 2 cloves garlic (minced)
  • ๐Ÿฅซ 1 (15 oz) can enchilada sauce
  • ๐Ÿง€ 2 cups shredded cheese (cheddar or Mexican blend)
  • ๐ŸŒฝ ยฝ cup corn (optional)
  • ๐Ÿซ˜ ยฝ cup black beans (optional)
  • ๐Ÿง‚ Salt & pepper to taste
  • ๐ŸŒฟ Fresh cilantro & green onions for garnish

๐Ÿ‘ฉโ€๐Ÿณ Instructions

1๏ธโƒฃ Preheat Oven

  • Set oven to 375ยฐF (190ยฐC).

2๏ธโƒฃ Cook the Beef Filling

  • In a skillet over medium heat, cook ground beef & onions until beef is browned.
  • Add garlic, chili powder, cumin, salt & pepper. Stir well.
  • Mix in ยฝ cup enchilada sauce, black beans & corn (if using).

3๏ธโƒฃ Assemble the Enchiladas

  • Spread 2 tbsp enchilada sauce on each tortilla.
  • Add beef filling & shredded cheese.
  • Roll them up tightly and place seam-side down in a greased baking dish.

4๏ธโƒฃ Add Sauce & Cheese

  • Pour remaining enchilada sauce over the tortillas.
  • Sprinkle with extra cheese on top.

5๏ธโƒฃ Bake to Perfection

  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake another 5 minutes until cheese is bubbly.

6๏ธโƒฃ Serve & Enjoy

  • Garnish with chopped green onions & cilantro. Serve hot! ๐ŸŒฟ๐Ÿง€
