- 🌮 8 flour tortillas
- 🥩 1 lb ground beef
- 🌰 ½ cup onion (chopped)
- 🌶 1 tsp chili powder
- 🌿 ½ tsp cumin
- 🧄 2 cloves garlic (minced)
- 🥫 1 (15 oz) can enchilada sauce
- 🧀 2 cups shredded cheese (cheddar or Mexican blend)
- 🌽 ½ cup corn (optional)
- 🫘 ½ cup black beans (optional)
- 🧂 Salt & pepper to taste
- 🌿 Fresh cilantro & green onions for garnish

1️⃣ Preheat Oven
- Set oven to 375°F (190°C).
2️⃣ Cook the Beef Filling
- In a skillet over medium heat, cook ground beef & onions until beef is browned.
- Add garlic, chili powder, cumin, salt & pepper. Stir well.
- Mix in ½ cup enchilada sauce, black beans & corn (if using).
3️⃣ Assemble the Enchiladas
- Spread 2 tbsp enchilada sauce on each tortilla.
- Add beef filling & shredded cheese.
- Roll them up tightly and place seam-side down in a greased baking dish.
4️⃣ Add Sauce & Cheese
- Pour remaining enchilada sauce over the tortillas.
- Sprinkle with extra cheese on top.
5️⃣ Bake to Perfection
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 5 minutes until cheese is bubbly.
