
These homemade beef enchiladas are stuffed with seasoned ground beef, smothered in a rich enchilada sauce, and baked to perfection with lots of gooey cheese. Perfect for weeknight dinners or family gatherings!

Ingredients
8 flour tortillas
1 lb ground beef
½ cup onion (chopped)
1 tsp chili powder
½ tsp cumin
2 cloves garlic (minced)
1 (15 oz) can enchilada sauce
2 cups shredded cheese (cheddar or Mexican blend)
½ cup corn (optional)
½ cup black beans (optional)
Salt & pepper to taste
Fresh cilantro & green onions for garnish
Instructions
Preheat Oven
- Set oven to 375°F (190°C).
Cook the Beef Filling
- In a skillet over medium heat, cook ground beef & onions until beef is browned.
- Add garlic, chili powder, cumin, salt & pepper. Stir well.
- Mix in ½ cup enchilada sauce, black beans & corn (if using).
Assemble the Enchiladas
- Spread 2 tbsp enchilada sauce on each tortilla.
- Add beef filling & shredded cheese.
- Roll them up tightly and place seam-side down in a greased baking dish.
Add Sauce & Cheese
- Pour remaining enchilada sauce over the tortillas.
- Sprinkle with extra cheese on top.
Bake to Perfection
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 5 minutes until cheese is bubbly.
Serve & Enjoy
- Garnish with chopped green onions & cilantro. Serve hot!
