Hummus Soup – Creamy, Healthy & Full of Mediterranean Flavor!

If you love hummus, you’re going to adore this Hummus Soup — it’s like your favorite dip turned into a warm, nourishing meal! Made with chickpeas, tahini, garlic, lemon, and warm spices, this soup is creamy without cream, naturally vegan, and packed with protein. Ideal for a quick lunch or a light dinner!

📝 Ingredients:

  • 🥫 1 can (15 oz) chickpeas, drained and rinsed
  • 🧅 1 small onion, chopped
  • 🧄 2 garlic cloves, minced
  • 🍋 2 tbsp lemon juice
  • 🧂 1 tsp ground cumin
  • 🌶️ ½ tsp smoked paprika (plus more for garnish)
  • 🧁 ¼ cup tahini
  • 💧 3 cups vegetable broth
  • 🧈 1 tbsp olive oil
  • 🧂 Salt and pepper, to taste
  • 🌿 Chopped parsley or cilantro, for garnish (optional)

👩‍🍳 Instructions:

1️⃣ Sauté Aromatics

Heat olive oil in a large saucepan over medium heat. Add onion and cook until soft, about 5 minutes. Stir in garlic, cumin, and paprika. Cook 1 minute more until fragrant.

2️⃣ Add Chickpeas & Broth

Add chickpeas and vegetable broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes.

3️⃣ Blend Until Smooth

Turn off the heat. Use an immersion blender (or transfer to a blender in batches) to blend the soup until creamy.

4️⃣ Add Tahini & Lemon

Stir in tahini and lemon juice. Season with salt and pepper to taste. Return to low heat to warm through, about 3–5 minutes.

5️⃣ Serve & Garnish

Ladle into bowls. Sprinkle with paprika and fresh herbs if desired. Serve hot with warm pita or crunchy croutons.
