Preheat oven to 350Β°F (175Β°C). Lightly grease a 12-cup muffin tin with nonstick spray or butter.

2️⃣ Whisk the Egg Mixture

In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.

3️⃣ Assemble the Bites

Divide the chopped bacon, shredded cheddar, and green onions (if using) evenly among the muffin cups. Pour the egg mixture over the fillings, about ΒΎ full in each cup.

4️⃣ Bake Until Set

Bake for 22–25 minutes, or until the centers are set and the tops are slightly puffed and golden.

5️⃣ Cool & Store

Let cool in the pan for 5 minutes, then gently loosen with a knife and transfer to a wire rack. Serve warm or store in the fridge for up to 5 days. Reheat in the microwave for 20–30 seconds.
