Chicken Vindaloo – Spicy, Tangy & Bursting with Flavor!

Chicken Vindaloo is a classic Goan curry with a Portuguese twist — featuring tender chicken marinated in vinegar, garlic, and warm spices, then simmered in a bold, fiery sauce. This dish is perfect for spice lovers who crave depth and heat in every bite. Serve it with fluffy rice or naan for a comforting and unforgettable meal!

📝 Ingredients:

For the Marinade:

  • 🍗 1.5 lbs boneless chicken thighs, cut into chunks
  • 🧄 4 garlic cloves, minced
  • 🌶️ 2 tsp paprika
  • 🌶️ 1 tsp cayenne or red chili powder (adjust to taste)
  • 🌿 1 tsp ground cumin
  • 🌿 1 tsp ground coriander
  • 🌿 ½ tsp turmeric
  • 🍋 2 tbsp white vinegar
  • 🧂 ½ tsp salt

For the Curry:

  • 🧅 1 large onion, finely chopped
  • 🧄 2 garlic cloves, minced
  • 🧈 2 tbsp oil or ghee
  • 🍅 1 tbsp tomato paste
  • 🍗 ½ cup water or chicken broth
  • 🌿 ½ tsp garam masala
  • 🍃 Fresh cilantro, for garnish (optional)

👩‍🍳 Instructions:

1️⃣ Marinate the Chicken

In a bowl, mix all marinade ingredients with the chicken. Cover and marinate in the fridge for at least 30 minutes, or up to 24 hours for deeper flavor.

2️⃣ Sauté Onion & Garlic

In a large skillet or Dutch oven, heat oil over medium heat. Add chopped onions and sauté until golden brown (about 8–10 minutes). Add garlic and cook 1 minute more.

3️⃣ Cook the Chicken

Add the marinated chicken (along with all marinade) to the skillet. Cook for 5–7 minutes, stirring occasionally, until chicken is lightly browned.

4️⃣ Add Tomato & Simmer

Stir in tomato paste and water or broth. Bring to a simmer and cook uncovered for 15–20 minutes, or until chicken is fully cooked and sauce thickens. Stir in garam masala at the end.

5️⃣ Garnish & Serve

Garnish with fresh cilantro and serve hot with basmati rice, naan, or roti.
