Soft zucchini omelette

This soft zucchini omelette is an easy-to-make appetizer to serve on any occasion. It’s made from simple, inexpensive ingredients. And the result is really excellent, both visually and in taste. Ingredients
4 eggs
50 g flour
1 tuft parsley
150 g cooked ham
1 pinch salt
1 pinch pepper
2 zucchinis
200 g mozzarella
1 pinch oregano
50 g Parmesan cheese

Preparation
How to make the soft zucchini omelette?

Separate the egg yolks from the egg whites. Beat whites until stiff. Set aside. Beat egg yolks with oil and flour. Add cooked ham cut into very small strips, Parmesan, chopped parsley, oregano, salt and pepper. Mix well. Add egg whites and mix up and down with a spatula until frothy and airy.

Line a medium rectangular baking tin with parchment paper. Pour the batter inside. Even out with a spoon. Cut the zucchinis into very thin slices and place gently on top. Add the finely chopped mozzarella. Bake at 180 degrees for 20-25 minutes.

Once the soft zucchini omelette is ready, remove from the oven and leave to cool. Remove the omelette from the tin, cut into rectangular pieces and serve.
