Zucchinis stuffed with ham and mozzarella

Ingredients
4 large zucchinis
100 g ham, single-sliced
250 g smoked mozzarella
70 g breadcrumbs
20 g pine nuts
Extra-virgin olive oil to taste
50 g grated Parmesan cheese
Basil to taste
Salt to taste
Pepper to taste
1 small onion

How to make zucchini stuffed with ham and mozzarella?

Rinse the zucchinis, remove the 2 ends and cut into 2 parts. Cut the skin on one side into a 3 mm slice. Using a spoon, remove the pulp from the zucchini, leaving a few millimeters all around to obtain 8 boats. Cut the pulp into cubes.

Peel and finely chop the onion. Put a little oil in a frying pan. Add onion and zucchini cubes. Season lightly with salt and pepper. Cook very quickly, until lightly browned. Cut mozzarella and ham into small cubes.

Line a baking sheet with parchment paper and brush with oil. Turn oven on to 180°. Place the diced zucchini pulp in a bowl. Add the breadcrumbs, grated Parmesan and a little oil. Mix with a spoon. Add the pine nuts and a few chopped basil leaves. Mix all the ingredients together.

Fill the zucchinis with the filling and place them gradually on the baking sheet. As soon as all the boats are abundantly stuffed, bake them at 180° for about 20 minutes. They should be golden brown.
