Vegetarian “beef” soup is a flavorful and hearty soup made with vegetarian alternatives such as textured vegetable protein (TVP), tempeh, or a variety of vegetables and legumes instead of actual beef. Here’s a delicious vegetarian beef soup recipe:
Ingredients
1/2 tbsp canola oil
3-4 pounds chuck roasting
7-8 Cups Low Sodium Beef Broth
1/4 teaspoon fresh ground black
Pepper to taste
2 laurel leaves
1 Medium Chopped Onion
2 ribs chopped celery
2 peeled and chopped islands
2 garlic cloves
1 tsp dried parsley
1/2 tsp oregano
1/2 tsp marjoram
/4 tsp dried thyme leaves
1/4 tsp dried basil
2 medium potatoes(cubes)
1/4 pounds green beans
1 can small tomato cubes
1 tbsp Worcestershire sauce
Directions
Step 1
In a Dutch oven or heavy stock, heat 1 1/2 tablespoons of canola oil over medium-high heat. Add a roasted chuck and sear it on both sides until it turns red. Add three cups of beef broth, black pepper, and bay leaves (or enough to cover the ingredients). The fork should be cooked after 2 1/2 to 3 hours of simmering.
Step 2
1 tbsp canola oil in a different Dutch oven or heavy stock over medium heat after the beef has simmered for about 2 hours. Cook for 5-7 minutes, or until the onion and celery are cooked, after adding the carrot. Add the garlic, parsley, oregano, marjoram, thyme, and basil after lowering the heat to a low setting. Stir continuously for 1 minute.
Step 3
Add potatoes, green beans, chopped tomatoes, Worcestershire sauce, and 4 cups of beef broth. Put 1 1/2 cups of the broth in which you cooked the roast, being careful to remove the bay leaves. 20β30 minutes should pass before the vegetables are cooked. Take the cooked chuck out of the pot and let it cool on a cutting board. Use the second fork to disassemble it, removing the cartilage and fat. Warm the grated beef in the pan for 5 minutes.
