Crispy Corn Nuggets: A Delicious Snack or Side Dish

Crispy on the outside and tender on the inside, these Corn Nuggets are a delightful snack or side dish that’s perfect for parties, picnics, or simply satisfying your craving for something crunchy and delicious. Made with sweet corn kernels and a flavorful batter, these bite-sized nuggets are sure to be a hit with both kids and adults.

Ingredients:

  • 2 cups frozen or canned sweet corn kernels, thawed and drained
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 cup buttermilk
  • 2 large eggs
  • Vegetable oil, for frying
  • Ranch dressing or dipping sauce of your choice, for serving (optional)

Instructions:

1. Prepare the Corn Nuggets:

  • In a large mixing bowl, combine the sweet corn kernels with the all-purpose flour, cornmeal, grated Parmesan cheese, baking powder, salt, black pepper, garlic powder, onion powder, and paprika. Mix well to coat the corn kernels evenly.

2. Create the Batter:

  • In a separate bowl, whisk together the buttermilk and eggs until well combined.

3. Combine Wet and Dry Mixtures:

  • Pour the buttermilk and egg mixture over the dry corn mixture. Stir until everything is thoroughly combined and a thick batter forms.

4. Heat the Oil:

  • In a large, deep skillet or Dutch oven, add enough vegetable oil to reach a depth of about 2 inches. Heat the oil over medium-high heat to 350°F (175°C).

5. Fry the Corn Nuggets:

  • Using a spoon or cookie scoop, carefully drop spoonfuls of the corn batter into the hot oil.
  • Fry the nuggets in batches, making sure not to overcrowd the pan, for about 2-3 minutes per side, or until they are golden brown and crispy.
  • Use a slotted spoon or tongs to remove the fried nuggets and place them on a paper towel-lined plate to drain any excess oil.

6. Serve and Enjoy:

  • Serve your Crispy Corn Nuggets hot, as a snack, side dish, or appetizer.
  • Optionally, serve them with ranch dressing or your favorite dipping sauce for added flavor.
