Greek Quesadillas: A Mediterranean Twist on a Classic

Greek Quesadillas are a fusion of Mediterranean and Mexican flavors, combining the beloved quesadilla concept with the fresh and vibrant ingredients of Greek cuisine. These delicious quesadillas are filled with creamy tzatziki, spinach, olives, feta cheese, and your choice of protein. They make for a delightful and satisfying meal.

Ingredients:

For the Greek Quesadillas:

  • 4 large flour tortillas
  • 1 cup cooked chicken, shredded or diced (or other protein of your choice, such as grilled shrimp or tofu)
  • 1 cup fresh spinach leaves
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • Olive oil (for cooking)

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and black pepper, to taste

Instructions:

1. Prepare the Tzatziki Sauce:

  • In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh lemon juice, chopped dill, salt, and black pepper. Mix well. You can adjust the seasonings to taste. Set the tzatziki sauce aside.

2. Assemble the Quesadillas:

  • Lay out the flour tortillas on a clean surface.
  • On one half of each tortilla, spread a generous spoonful of the prepared tzatziki sauce.
  • Layer on the cooked chicken (or your choice of protein), fresh spinach leaves, Kalamata olives, and crumbled feta cheese.
  • Fold the other half of the tortilla over the filling to create a half-moon shape.

3. Cook the Quesadillas:

  • Heat a drizzle of olive oil in a skillet over medium heat.
  • Carefully place the filled tortillas in the skillet, one or two at a time, depending on the size of your skillet.
  • Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the filling is heated through.

4. Serve:

  • Remove the cooked Greek Quesadillas from the skillet and let them cool for a minute before slicing.
  • Serve hot, with extra tzatziki sauce for dipping.

5. Enjoy:

  • Enjoy the Mediterranean-inspired flavors of your Greek Quesadillas. They make for a satisfying meal that’s bursting with fresh and tangy ingredients.
