Rigatoni with Beef and Portobello Mushroom Sauce Recipe:

Ingredients:

  • 400g (14oz) ground beef.
  • 1 onion, finely chopped.
  • 2 cloves of garlic, crushed and chopped.
  • 1 carrot, grated.
  • 3 portobello mushrooms, diced.
  • 200g (7 oz) Datterini tomatoes, halved.
  • 2 tbsp tomato paste.
  • 400g (2 cups) tomato sauce.
  • Salt.
  • Pepper.
  • Paprika.
  • 400g (14 oz) rigatoni pasta.
  • Fresh parsley, chopped.
  • 70g (2.4 oz) grated mozzarella.

Instructions:

1. Prepare the Beef and Mushroom Sauce:

  • In a pan, fry 400g ground beef for 2-3 minutes.
  • Add finely chopped onion, crushed garlic, grated carrot, diced portobello mushrooms, and halved Datterini tomatoes.
  • Stir in 2 tbsp tomato paste and 400g tomato sauce.
  • Season with salt, pepper, and paprika. Simmer until the sauce is rich and flavorful.

2. Cook the Rigatoni Pasta:

  • Cook 400g rigatoni pasta in salted boiling water until al dente.
  • Drain the pasta and set aside.

3. Combine and Bake:

  • Mix the cooked rigatoni with the prepared beef and mushroom sauce.
  • Add a handful of fresh chopped parsley and mix well.
  • Transfer the mixture to a baking dish.

4. Add the Finishing Touch:

  • Sprinkle 70g grated mozzarella over the pasta.

5. Bake to Perfection:

  • Place the baking dish in the oven and bake until the cheese is melted and bubbly.

6. Garnish and Serve:

  • Remove from the oven, garnish with additional parsley, and serve hot.
