This recipe, which combines the freshness of salmon with the crunch of breadcrumbs and cornmeal, provides a delightful blend of textures and flavors. These patties are ideal as a main dish or appetizer, and they add a touch of Southern charm to your table.

Ingredients:

  • 1 lb canned or cooked salmon, drained and flaked
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green bell pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup cornmeal
  • 2 large eggs, beaten
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions:

  1. Prepare the Mixture: In a large bowl, combine the flaked salmon, onion, bell pepper, celery, parsley, breadcrumbs, and cornmeal. Mix well.
  2. Add Wet Ingredients: Add the beaten eggs, mayonnaise, Dijon mustard, hot sauce (if using), Old Bay seasoning, salt, and pepper. Mix until all ingredients are well combined.
  3. Form Patties: Shape the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. You should get about 8-10 patties.
  4. Heat Oil: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot.
  5. Fry Patties: Fry the salmon patties in batches, about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them from the skillet and drain on paper towels.
  6. Serve: Serve hot with a side of tartar sauce, lemon wedges, or your favorite dipping sauce.

Classic Southern Fried Salmon Patties are a delicious way to combine the delicate flavor of salmon with a satisfying crunch. Whether served with tartar sauce, a squeeze of lemon, or your favorite condiment, they will be a hit at any meal. Enjoy a taste of the South with this simple recipe!
