Cream Cheese and Bacon Stuffed Doritos Chicken

  • 2 large eggs, beaten
  • 1 teaspoon garlic powder

  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Prepare the Filling: In a medium bowl, combine 1 cup of softened cream cheese, 1 cup of crumbled cooked bacon, and 1 cup of shredded cheddar cheese. Mix until well blended.
  3. Prepare the Chicken: Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through. Spoon the cream cheese mixture into each pocket, filling them generously.
  4. Prepare the Breading Station: Set up three shallow bowls: one with 1/2 cup of all-purpose flour, one with 2 beaten eggs, and one with 2 cups of crushed Doritos mixed with 1 teaspoon each of garlic powder, onion powder, paprika, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.
  5. Bread the Chicken: Dredge each stuffed chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, then coat it thoroughly with the crushed Doritos mixture, pressing gently to adhere.
  6. Cook the Chicken: Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear each chicken breast for about 2-3 minutes per side, until golden brown.
  7. Bake the Chicken: Transfer the seared chicken breasts to the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the filling is hot and bubbly.
  8. Serve: Allow the chicken to rest for a few minutes before serving. Garnish with additional crumbled bacon or chopped fresh herbs, if desired.
