These spicy Mexican corn fritters are the perfect snack for any occasion. Theyโ€™re crispy, flavorful, and packed with that signature spicy kick everyone loves.

๐Ÿ“‹ Ingredients:

  • 2 cups corn kernels (fresh, frozen, or canned, well-drained) ๐ŸŒฝ
  • 1/2 cup cornmeal ๐ŸŒพ
  • 1/4 cup all-purpose flour ๐ŸŒพ
  • 1 teaspoon baking powder ๐ŸŒพ
  • 1/2 cup crumbled queso fresco ๐Ÿง€
  • 1/4 cup red onion, finely chopped ๐Ÿง…
  • 2 cloves garlic, minced ๐Ÿง„
  • 1 jalapeรฑo, finely chopped (optional for extra heat) ๐ŸŒถ๏ธ
  • 1/4 cup fresh cilantro, chopped ๐ŸŒฟ
  • 1/2 cup milk ๐Ÿฅ›
  • 1 egg, beaten ๐Ÿฅš
  • Salt and pepper to taste ๐Ÿง‚
  • Oil for frying ๐Ÿซ’
  • Lime wedges for serving ๐Ÿ‹

๐Ÿ“ Instructions:

1. Prepare the Corn Mixture:

  1. Mix the dry ingredients:
  • In a large bowl, combine the cornmeal, flour, and baking powder. Add a pinch of salt and pepper to taste.
  1. Add the fresh ingredients:
  • Stir in the corn kernels, crumbled queso fresco, red onion, garlic, jalapeรฑo (if using), and chopped cilantro. Mix well to evenly distribute the ingredients.

2. Make the Batter:

  1. Add the wet ingredients:
  • Pour in the milk and beaten egg into the corn mixture. Stir until you have a thick, uniform batter.

3. Form the Fritters:

  1. Shape the fritters:
  • Use your hands to shape small balls or patties from the batter. If the mixture is too wet, add a little more cornmeal to achieve the right consistency.

4. Fry the Fritters:

  1. Heat the oil:
  • In a large skillet, heat enough oil over medium-high heat to fry the fritters.
  1. Fry:
  • Carefully place the fritters in the hot oil, making sure not to overcrowd the skillet. Fry until golden and crispy on both sides, about 2-3 minutes per side.
  1. Drain:
  • Remove the fritters from the skillet and place them on paper towels to drain excess oil.

5. Serve:

  1. Add a finishing touch:
  • Serve the spicy Mexican corn fritters with lime wedges for squeezing over the top just before eating. You can also serve them with your favorite dipping sauce.
