These spicy Mexican corn fritters are the perfect snack for any occasion. They’re crispy, flavorful, and packed with that signature spicy kick everyone loves.

  • 2 cups corn kernels (fresh, frozen, or canned, well-drained) 🌽
  • 1/2 cup cornmeal 🌾
  • 1/4 cup all-purpose flour 🌾
  • 1 teaspoon baking powder 🌾
  • 1/2 cup crumbled queso fresco πŸ§€
  • 1/4 cup red onion, finely chopped πŸ§…
  • 2 cloves garlic, minced πŸ§„
