2 large chicken breasts, halved into 4 cutlets
Salt & pepper, to taste
1 cup breadcrumbs (preferably Panko)
Β½ cup grated Parmesan cheese
2 eggs, beaten
1 tsp Italian seasoning
1 cup marinara sauce
1 cup shredded mozzarella cheese
ΒΌ cup grated Parmesan cheese (for topping)
Β½ cup all-purpose flour
Β½ cup olive oil (for frying)
Fresh basil or parsley, for garnish
Instructions
Prepare the Chicken
- Slice the chicken breasts in half horizontally to make 4 thinner cutlets.
- Season with salt & pepper.
Coat the Chicken
- Set up a dredging station:
- Bowl 1: Flour
- Bowl 2: Beaten eggs
- Bowl 3: Mix breadcrumbs, Parmesan cheese, and Italian seasoning.
- Dip each chicken piece in flour, then egg, then coat with breadcrumb mixture.
Fry the Chicken
- Heat olive oil in a pan over medium heat.
- Cook chicken 3-4 minutes per side until golden brown and crispy. (Donβt overcrowd the pan!)
- Transfer to a paper towel-lined plate.
Assemble & Bake
- Preheat oven to 375Β°F (190Β°C).
- Place fried chicken in a baking dish.
- Top each piece with marinara sauce, mozzarella cheese, and Parmesan.
